The Bonnaire Trilogie Collection 2008 is a unique limited-edition set released in late 2019 by Champagne Bonnaire, a renowned Grand Cru Champagne house in the Côte des Blancs, France. Designed to celebrate the exceptional 2008 Champagne vintage, this set contains three 750ml bottles of Blanc de Blancs Grand Cru vintage Champagne.
It is a limited-edition 3-bottle gift pack of Grand Cru Blanc de Blancs champagne from Champagne Bonnaire, featuring the legendary 2008 harvest. Each 750ml bottle in the set uses the exact same 100% Chardonnay base from Cramant parcels but showcases a different vinification and aging method.
Differences in the production of the 3 champagnes in the set
No. 1 (Stainless Steel Tank Fermentation + Metal Cap Aging):
- Process: Fermented for 9 months in temperature-controlled stainless steel tanks, followed by secondary fermentation in the bottle using a standard metal cap and lees aging for up to 9 years.
- Flavor: The purest and most concentrated flavor profile. It exhibits pronounced chalky, mineral, fresh lemon, and high acidity.
No. 2 (Oak Barrel Fermentation + Metal Crown Aging):
- Process: Fermented and aged for 12 months in 205-liter French oak barrels, followed by bottle aging with a metal crown.
- Flavor: The most full-bodied. It exhibits mature aromas of tropical fruits (pineapple, mango), baked goods, croissants, honey, and a hint of toffee. The palate is smooth and layered.
No. 3 (Stainless Steel Tank Fermentation + Natural Cork Aging):
- Process: Fermentation takes place in stainless steel tanks, but during secondary fermentation and lees aging, the metal cap is replaced with a traditional natural cork stopper sealed with an iron ring.
- Flavor: The slightly oxygen-permeable cork imparts the most rounded, mature, and ocpulent aromas to this champagne. Secondary aromas of nuts and toast are particularly captivating.
