Chichibu (Ichiro's Malt) "The Floor Malted" (2012 Release) is a landmark single malt Japanese whisky, one of the earliest releases from the Chichibu Distillery. This masterpiece is a result of founder Ichiro Akuto's return to Japan after studying traditional floor malting techniques in England, where he personally oversaw the distillation process. Only 8,800 bottles were released worldwide.
- Distillation Year: 2009
- Bottling Year: 2012
- Age: 3 years (Single Malt Whisky)
- ABV: 50.5% (Cask Strength)
- Maturation Cask Type: Primarily matured in ex-bourbon casks
Traditional Ground Malting:
- The malt is entirely grown using the ancient, traditional method of hand-raking and turning it over in the ground.
- While this process is extremely labor-intensive, it imparts a deeper, more layered malt sweetness and complexity to the whisky.
Climate Facilitates Rapid Aging:
- Chichibu City's climate is characterized by hot summers and cold winters. The significant diurnal and seasonal temperature variations accelerate the interaction between the wine and the oak barrels.
- Although aged for only 3 years, the wine already exhibits a fullness, balance, and rich fruit aromas beyond the reach of oak barrels.
Nose: Definitely a bourbon nose, sweet with honey, pears, peaches and red delicious apples. Vanilla and floral notes.
Palate: Powerful cereal and malt join the fruit while bitter oak and spice add complexity.
Finish: Long, spicy and malty with lingering sweetness.
