Named after a local wildflower, Viola Odorata is sourced from five lieu-dits surrounding Corgoloin: En Vireville, En Fontenelle, Le Creux de Sobron, La Montagne, and Le Forneau; the vines within are 55-115+ years of age. The grapes will undergo carbonic maceration for 5 days, followed by several rounds of pigeage over two weeks. Pressed into barrels - a small portion of which are new - for 14-18 months' elevage before bottling without fining or filtering.
